Quick vegan food haul......

So I've just run literally across the road to Sainsbury's and grabbed a few bits ... by no means is this a full shop. What I actually find since being a vegan is that you tend to buy 'little and often' when it comes to food and you need a lot of fresh ingredients.

In this partial shop I have purchased a few cupboard essentials and 'quick bits' to rustle up something later for lunch and dinner.

Coconut Oil - I'm using to cook as well as avocado oil as opposed to olive oil these days.

Kidney Beans - can be used for the basis of loads of dishes - I love a bean salad - or a chilli con carne - or stew peas ....etc etc.

Coconut Milk - I use in smoothies, rice dishes, stew dishes etc. It provides that beautiful creamy texture and tastes divine.

Chives and Dill - I intend to make a potato salad - using vegan mayo of course (which I have already) I will also add the spring onion to it and maybe some mixed veg.

Spelt Flour - I'm opting to use spelt and wholemeal more then the traditional self raising and plain because they don't have the bleach in them - which has got to be better for you....right!

Quorn - can be used as a chicken substitute - Its important to check that the packaging says VEGAN in the top right hand corner as a lot of Quorn products are suitable for veggies but not vegans as they contain egg. I don't have any plans to use this today so I will just freeze it until I fancy a faux based chicken dish.

Veggie Sausages - I love these, they are full of flavour - have a beautiful texture and are slightly spicy ..I can eat them in a roll or just with a salad, either way they are lovely!
