Curried 'the lick' lentils

This vegan curried lentils dish provides a load of fiber and protein from the red lentils, while sweet peppers, coriander and chillies keep things spicy and fresh. The addition of ground turmeric adds undertones of additional spicy warmth as well as the huge health benefits that turmeric provides.

This is a flavoursome, easy, healthy and spicy dinner option that can be served with rice or potatoes.

  • 1 tablespoon avocado oil

  • ¼ Chilli

  • 1 red onion, diced

  • 1 spring onion

  • 2 cloves garlic, minced

  • 2 cups red lentils

  • 2 cups vegetable broth

  • 1/2 teaspoon curry powder

  • 1/2 teaspoon turmeric

  • 1/2 teaspoon cumin

  • 1/2 teaspoon black pepper

  • Chopped fresh coriander, for garnish
