Pumpkin 'pick me up' rice and avocado salad

Jamaican pumpkin rice is not considered a one-pot meal like the popular Jamaican seasoned rice so it serves as a lovely accompaniment to any additional veg based or even tofu or wheat meat dish. Pumpkin rice is very popular among the Rastafarian chefs/cooks in Jamaica. Ive added some broccoli to add some colour and additional nutrients.

The rice used is down to personal preference – wild or brown rice can be used, in this instance I used jasmine rice.

Pumkin Rice

2 tablespoon(s) dairy free butter

Brocoli rice

1stalk spring onion

Pumpkin, cut into cubes

3 1/2 cup(s) water

2 cup rice

1 whole scotch bonnet pepper

1/2 teaspoon(s) salt (optional)

Avocado Salad

Avocado – cut in half (remove seed) and scoop out the contents

3 chopped piccolo tomatoes

Sliced cucumber

1clove garlic

¼ Sliced red onion

½ teaspoon Scotch bonnet pepper

Chopped coriander

Drizzle with 2 Tbsp avocado oil
